Four-floor cocktail bar in Quay Head House on Colston Avenue, with a parlour bar, lounge, attic dining room and a whisky vault.

The Milk Thistle fills four floors of Quay Head House on Colston Avenue, in the middle of the city. The ground-floor Parlour is the cocktail bar, above it are a lounge and an attic dining room, and below street level a hidden vault holds the whisky collection. It was the sister bar of Hyde & Co, Bristol's original prohibition-style bar.

It opens Tuesday to Thursday from 18:00 to 01:00 and Friday and Saturday from 12:00 to 02:00, and it is closed on Sunday and Monday. Tables can be booked online, which is worth doing at the weekend. Not for you if you want a cheap pint: this is a cocktail bar first.
