Password-only speakeasy on Vicolo Cellini, opened in 2010 as Italy's first secret bar and open until 04:30 most nights.
The Jerry Thomas Project opened in 2010 on Vicolo Cellini, a lane near Chiesa Nuova in the historic centre, and calls itself Italy's first secret bar. The focus is on historic cocktail techniques, and the team launched its own vermouth, Vermouth del Professore, in 2013. It has appeared in The World's 50 Best Bars six times, most recently at number 98 on the extended 2025 list.
To get in you need the password, which comes with the newsletter on the bar's website, and you can book online. It opens at 21:00 every night and closes at 04:30 from Monday to Saturday and at 03:30 on Sunday. The same team runs the Bar Room on Via del Moro in Trastevere, open 18:00–02:00. Not for you if you like to walk in on a whim.
Password needed: sign up to the newsletter on the bar's website to receive it, and book online.
