Basement speakeasy behind a barber's shop front on Queen Street, No. 34 in The World's 50 Best Bars 2025.
Panda & Sons opened in late 2013 at 79 Queen Street. At street level it looks like an old American barber's shop; the bar is downstairs, through a bookshelf door, with wood panelling and panda-themed ornaments. A plaque on the wall reads: in 1832 on this spot nothing happened.
The owner, Iain McPherson, is known for sub-zero techniques such as freeze distillation and freeze-drying, and the menu includes frozen cocktails, alcoholic sorbets and a coconut daiquiri made with roasted coconut milk. The bar ranked No. 34 in The World's 50 Best Bars 2025, the only Edinburgh entry. Not for you if you dislike themed bars and punning drink names: the theatre is part of the deal.
Look for the barber's shop front: the bar is downstairs, through a bookshelf door.
