Eight-seat Nishi-Shinjuku cocktail bar built on herbs from the owner's family land, with house-made absinthe. Closed on Sundays.
Hiroyasu Kayama opened Bar Benfiddich in 2013 on the ninth floor of the Yamatoya Building in Nishi-Shinjuku. It seats eight. The drinks use ingredients from his family's land in Chichibu, such as yuzu, fennel and wormwood, on four spirit bases: amaro, whisky, gin and absinthe, with an absinthe made on site. Time Out notes there is no menu, the recipes change often and many drinks are prepared with a pestle and mortar.
It opens Monday to Saturday from 18:00 to 01:00 and closes on Sundays and public holidays. A cocktail averages about US$20, and the bar ranked No. 18 in The World's 50 Best Bars 2025. With only eight seats, arrive early. Not for you if you want a lively room or a table for a group.
Eight seats and no menu; closed on Sundays and public holidays.
